Mood-Boosting Spirulina Pancakes

The Magazine: Mood-Boosting Spirulina Pancakes

We love these easy-to-make energizing green pancakes — a super health twist on everyone's favorite comfort breakfast.

Thanks to a short list of wholesome ingredients, these pancakes are fun and healthy for the whole family. Instead of white refined flour, these pancakes use cholesterol-lowering oats, a banana — which fights bloating with potassium — and spirulina, a blue-green algae that contains an impressive amount of antioxidants and B vitamins, which can help improve mood and brain power. Spirulina also gives this dish an Instagram-able blue hue. The other star, hemp milk, which is good for your skin (thanks, fatty acids), muscles and nerves. Breakfast will never be the same.

Quantity

Makes 2 to 3 medium-sized pancakes. Note: These pancakes are more flat than fluffy, which should leave your tummy feeling flat, too.

Ingredients

¾ cup rolled oats (we like Bob’s Red Mill Organic Rolled Oats or Whole Foods 365 brand)

1 medium banana

½ cup + ½ Tbsp. hemp milk (we like Living Harvest’s Tempt Unsweetened Original Hemp Milk) or you can make your own

¼ tsp organic spirulina (we recommend E3 Live or another high quality product)

100% organic maple syrup, for serving

Directions

1. Combine rolled oats, banana, and hemp milk in a blender. Blend until smooth.

2. Add in spirulina and blend until the color is evenly mixed throughout.

3. Heat up a frying pan on low to medium heat with some grass-fed butter or coconut oil and make pancakes like you normally would, flipping once the edges become firm.

4. Stack and serve with warm organic maple syrup.
